Icelandic Skyr Mesophilic Yogurt Starter Culture
Skyr is an Icelandic cultured dairy product. It has the consistency of strained yogurt, but a milder flavor. Skyr is technically classified as cheese, although widely regarded as yogurt. It has been a part of Icelandic cuisine for centuries. This specific culture does not take rennet. Its microbial profile is the same as found in traditional skyr (they are the same culture, in fact!), but cultures with the mesophilic probiotics already present in traditional skyr.

This Traditional Skyr does not have a ropey texture. It’s thick and creamy.
CHILD APPROVED!
She tasted this one on the back of buttermilk, so we were already set up for success here. That said, her wide eyed expression had a smile this time, and she said, “this is GOOD! It’s sweet but still reminds me of Cheetos!” We didn’t note any Cheeto flavor, but that’s cool. Either way, she threw TWO THUMBS UP!! at us before she ran back to teleclass while shouting at us to make a new batch for her.
