The VERY RARE Viennese kombucha scoby originates from Vienna, Austria. It ferments a bit slower than most SCOBY’s but worth the wait!


This Viennese kombucha scoby feeds traditionally on Darjeeling tea which can be easily found in specialty tea shops or health food stores.

When buying Darjeeling tea, also known as “The Champagne of Teas”, you want to take note of the flush. The Darjeeling flush refers to the picking season of the tea leaves. First flush, second flush, monsoon flush, and autumn flush.

First flush (late February to mid April)- Delicate floral aroma and a bright lime green hue of the infused tea leaves.

Second flush (May to June)- Full bodied aromatic cup. This is the season where the famous “Darjeeling Muscatel” flavor becomes more pronounced. (This is our favorite!)

Monsoon flush (July to September)- More of a breakfast blend with a deeper color and a much stronger flavor.

Autumn Flush (October to November)- Very full bodied slightly fruity flavor and much darker in color.
