Crème Fraiche Ice Cream

Crème Fraiche ice cream is all of those things. If your family is like mine, ice cream doesn't last long. What if you secretly tried to make that ice cream more gut healthy? Would anyone notice the difference? My kids are fooled and so will yours! Crème Fraiche is a sweet thickened cream made by adding bacterial cultures to heavy cream and fermenting at room temperature for 24 hours. This recipe does not call for a heated milk base. Therefore, the bacteria in the crème fraiche remain and are preserved through freezing. Isn’t that wonderful? Keeping for directions and some other sweet ideas for your new crème fraiche cultures


Let’s get started. Heres what you’ll will need.

  • 2 cups Crème Fraiche **

  • 1 TSP Vanilla Extract

  • 1 cup sweetener (stevia, sugar, castor sugar)

  • Small pinch of salt (really rounds out the flavors)

  • 2 cups fruit (optional)

  1. Combine all ingredients together and blend for 30 seconds or until well combined.

  2. Place in refrigerator for 2 hours or until fully chilled.

  3. Pour into ice cream maker and churn until the mixture is the consistency of soft serve.

  4. Pour ice cream into a freezer safe container and freeze overnight.


Although this recipe calls for an ice cream maker, you definitely can blend all the ingredients and immediately place in the freezer. The heavy fat content resists ice crystal formation. Just be sure to wrap the mixture with plastic wrap to avoid freezer burn.

Alternatively, this recipe makes AMAZING popsicles. Pour into a popsicle mold, freeze, and eat!
