Our einkorn starter really is something special. It’s creamy, with soft vanilla notes and a milk sourness. It’s also super, super excited to rise loaves for you! Of all the ancient grains, it’s einkorn that comes the closest to behaving like common wheat. It also looks closest to it because the flour has such a light color!

Our child tester chewed excitedly while waving her two thumbs up in the air, and then told us it was… wait for it… CREAMY! We weren’t sure if she’d notice this unique feature of the starter and flour, but she did! Once she’d swallowed her first bite, she let us know that our crusts are still too crispy, but she doesn’t mind because she’ll just leave us crusts while she eats allllll the crumb! Lastly, she told us that the kids at her school just don’t know what they’re missing, which is high praise indeed. We tried to ask her more questions about her thoughts, but were unable to do so because she snatched more bread off the table and ran off to play video games while she ate. Two thumbs up!
