To be honest, we rarely see a sourdough starter that is so eager to rise like it wants to be commercial yeast. It’s still not quite there, but this creamy, excited, mouth-wateringly mellow tasting, medium-low sourness starter is exceptional - enough so that it will quickly earn its place as one of your favorites! Impossibly, its flavor is a bit reminiscent of teff. It also can take a bit of neglect and act like it never happened. That’s important for some members of our team.

We like this best at about 70% hydration for a chewy, almost elastic, yet still smooth and bubbly, sandwich loaf. The only real downside of the Egyptian sourdough starter is that it overproofs far faster than any other starter we’ve ever seen. You cannot do a 24-hour proof unless you’re using an insanely small amount of starter in your dough. So don’t plan to be gone for a day while the dough rises or you’ll return to it having outgrown its bowl!"
