Icelandic Skyr Thermophilic Heirloom Yogurt Starter Culture

from $15.00

Our Icelandic Skyr Thermophilic Culture is known for its thick body and clean, refreshing flavor. Rich and creamy with the consistency of strained yogurt, skyr has been a staple of Icelandic cuisine for centuries.

Skyr is technically classified as a fresh cheese, though it is widely enjoyed like yogurt. With this thermophilic culture, the milk is gently heated and fermented, allowing the beneficial bacteria to develop the classic skyr flavor and structure. The cultured milk is then strained to create the thick, creamy texture that makes skyr so distinctive.

For those wishing to follow traditional cheese-style preparation, optional rennet may be added to help strengthen the curd and more closely align with skyr’s classification as a soft cheese. However, it is not required for producing delicious homemade skyr.

Compared to mesophilic skyr cultures, thermophilic cultures tend to develop a brighter, slightly more tart flavor, giving the finished skyr a lively and refreshing character.

The finished skyr is thick, smooth, and creamy with a pleasantly tangy flavor. It can be enjoyed plain, topped with fruit or honey, blended into smoothies, or used in both sweet and savory recipes.

Simple, traditional, and wonderfully satisfying, this culture makes it easy to create authentic Icelandic skyr right in your own kitchen.

• Smooth, creamy texture

• Perfect for breakfast bowls, smoothies, and desserts

Thick, tangy, and deeply traditional, this culture produces authentic homemade skyr with the bright flavor and creamy body that has made it a beloved Icelandic staple for generations.

This Skyr does NOT have a ropey texture. It’s thick and creamy. This culture is exactly the same as the mesophilic version. It’s the bacteria here that allow for higher temperature fermentation, whereas the yeast are in charge in the mesophilic.
